As a part of our ongoing healthy dieting, (we did a week of raw…that’s all we could handle!) I came up with this fabulous salad. You think it’s going to be sweet but then you get a little bite of the red onion with the avocado and cantaloupe and it’s fabulous.

Roasted Vegetable Salad


The hubby had this crazy idea to eat a raw diet for one week. No bacon. No meat of any kind. Shit, nothing COOKED. I thought he was insane. I mean, really. This is the man who physically CANNOT go without protein for breakfast on the weekends. And now he wants to eat raw fruits and vegetables for a WEEK? And this is the girl who loves to cook heart warming, gloriously comforting food. With butter, and cream and all things delicious. But, alas! We are on day three and doing great.

Slow Roasted Red Onion “Dressing/Stuffing” with Hot Italian Sausage

It’s 9:45 on Monday night. I’m chilling with a glass of wine working on cleaning up my iphoto “events.” Rather than be called “events” I feel they should be called, “homage to your daughters….(and food!)”  Rarely will you see Ry or I in the monthly upload of pictures from our camera. It’s usually more like: Buggies, Buggies, Pixie, food, food, Pixie, Pixie, Pixie, Buggies, food, food, food. Granted, neither Buggies or Pixie can use the camera yet (nor can the food) so I guess that lowers our chances right off the bat. Plus, I’d rather look at all three of them over Ry and I anyday. Food included. 😉

Switching tangents…WOW! I can’t believe Halloween has come and gone. Pixie turned four. And Thanksgiving is NEXT WEEK? How did that happen? Here I thought I had all the time in the world and instead I realize that 16 people will be banging down my door in a little over a week. I know, I sound like, “Woe is me!” Dismiss that because I love it. I love having all of my family and friends gathered around our table to give thanks for the year we’ve had; whether successful or not – we always have things to be thankful for. It’s been a hard year, a crucial year and a year filled with laughter and love and kindness.

Avocado Eggrolls

Way back when in Once Upon a Time time, I used to work for this small restaurant you have probably never heard of called The Cheesecake Factory. Before I started working there, Hubby and I were obsessed with their Avocado Eggrolls. After my second day working there, I dryheaved carrying them out to tables. You know how burnt out you can get on certain food after awhile? And I wasn’t even eating them. It was the smell that did it! Damn you, olfactory senses!!

Anyway, within a few weeks, I was burnt out on 200 seperate menu items. That being said, enough time has passed since my darker days as a server at the place that shall not be named. And now I’m craving them again. No, not that kind of craving. (better not be) So after some thinking and google-ing, I mastered the recipe. Here it is peeps!

Hubby’s note: Avocado + Fried + Cashew Sauce = Happy Hubby. The Cashew sauce is amazing. If I could figure out a way to get it through the IV tube into my arm, I might try it.

Spinach Salad with Balsamic Onion Dressing

Salads are a pretty standard fallback meal in our house. They are healthy, delicious and easy to make. Most evenings we don’t sit down to eat our dinner until after Buggies and Pixie are fast asleep. And some days don’t go as smoothly as others. Which brings me to make an easy salad for dinner. Spinach is such a wonderful source of vitamins and is one of the healthiest leaves you can put in your body. Granted topping it off with bacon may not be the best thing for your body but my motto is, “everything in moderation.” In this picture you can see croutons which I don’t normally use. But they were calling my name in Trader Joe’s…

Hubby’s note: And my motto is, “WHERE’S THE BACON”?! Bacon + Avocado = Happy Hubby. Wait, did you say this was healthy?

Italian Quesadillas

I’m not gonna lie. It takes some planning to keep new recipes coming every few days. And my past two weeks have been crazy so my posts have dwindled for just a moment. But I’m proud to say that I’ve been stockpiling. I’ve got some ammunition that I’m ready to release people! That being said, I had a very ambitious night where I decided to make six (SIX!!!) new recipes for a casual dinner party. And of course because I hadn’t spent a few days in my kitchen and I’m pretty sure my Kitchenaid hummed to life on its own, I needed to cook. I was also craving mushrooms and because Ryan won’t eat mushrooms, I thought I could add them to an appetizer and get my fix. That’s one of my favorite things about entertaining friends, we outnumber my picky husband so I can make some really yummy dishes!

Oh! And these are vegetarian  😉

Hubby’s Note: Yes. I’m picky. But I’m really cute. So…I’ve got that going for me…which is nice.
