Best Breakfast Burrito

Okay, so here is the deal people. It’s W-Day. Yes. Yes, W-Day is Sean and Annie’s wedding day. For which I am making 300 French Macarons for. And coordinating the rehearsal dinner for. And hosting a day after the big day BBQ for. So I’ve lost all sense of reality peeps. I feel like I’m living in the twilight zone at this point. This will be my only post this week. I’m SO SORRY! I feel like I’m letting you down. I promise to make up for it next week but right now, it’s 11:26 and I think my bedtime tonight will be closer to 2 or 3 AM time. Wish me luck and I promise to post tons of pics of the big day!

In the meantime, make this burrito for breakfast. It’s delish and if you post on Facebook that you are making it, I might show up at your house looking frazzled with a bottle of champagne and invite myself in for a burrito.
This burrito is a take on my other breakfast indulgence, Morning Glory. The first time I made this was at the Kern River about a month ago and it was quite the hit.

Hubby’s Note: I’m convinced that I could make anything into a burritto and enjoy it. I could wrap a pickle, a carrot, and maybe Thomas the Train into a tortilla, throw some Frank’s Red Hot sauce and guacamole on it and i’d be a happy man. All that being said, I’d much rather have this magical concoction of yumminess in my breakfast burritto than the aforementioned ingredients. It’ll be better on the back end this way too.

Ingredients
1 pound crumbled hot Italian sausage
1 pound bacon
6 large eggs
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
8 (12-inch) flour tortillas, lightly toasted and kept warm until ready to use
1 cup sharp cheddar cheese
2 avocados, pitted and sliced
1 can refried beans, warmed

Directions
Preheat the oven to 200 degrees F. Set a 10-inch nonstick saute pan over medium heat and add the sausage to the pan. Cook the sausage until completely cooked through, about 10 minutes. Once cooked, remove the sausage and dump the oil. Return the pan to the heat and add the bacon. Cook bacon until crispy and transfer to a paper lined plate. Return the pan to the stove and add the butter. In a medium bowl, whisk the eggs, salt and pepper. Once the butter has melted, add the egg mixture to the pan and cook, stirring occasionally using a rubber spatula. Scrape the bottom of the pan and fold the cooked egg over itself. Cook the eggs for about 3 minutes and then add in the cheese and crumbled sausage. To assemble the burritos, place 2 tablespoons of beans on the bottom of a warmed tortilla followed by 1/8 of the egg mixture. Top with 2 slices of bacon and 1/4 of one half of avocado. Roll the burrito from the bottom up and rest in an oven-proof casserole dish with the seam down. Place the casserole in the oven. Continue with the remaining tortillas and place them in the casserole as well, to keep warm. Serve immediately!

    Have you tried baking your bacon? If not, bake it on a rack at 250 for 45 minutes, or 350 for 20-25 mintues or until desired crispness! (Either way, you’ll want to line your baking sheet with foil for easier clean up)
    It saves a lot of time and work space.
    Also, to change things up, sprinkle a little brown sugar and fresh cracked pepper 🙂

      Lindsay – Yes! Thank you for posting this great tip about baking bacon. The problem in my household is, I’m usually using the bacon grease for something right away and its easier for me to just cook the bacon and use the same pan for my next step. FYI – bacon should be its own food group. Don’t tell on me! But seriously, it should be.
