Garlic Vinaigrette

You know we love salads in this house and this dressing is so stinkin’ easy and so stinkin’ stinky that it is delicious. When we make a traditional mixed green salad with tomatoes, artichoke hearts, avocado, pine nuts and gorgonzola – this dressing is perfect.

Hubby’s note: Before I married Jessica, I thought that a “traditional” salad was lettuce and salad dressing. I was wrong. And surprise, surprise, there’s GARLIC in it.

Super Duper Spaghetti

About every three weeks, Pixie will turn to me and say “Mommy will you PLEASE make Mommy Spaghetti? PLEASE!” As if she’s a starved child who is fed sub-par food everyday of her life. So in my most dramatic four year old voice I respond with, “Oh Pixie! I would LOVE to make you spaghetti tonight.” So, I always have the items for my spaghetti on hand. Here we go!

Hubby’s note: Recurring theme…this meal is amazing! I LOVE this spaghetti and I don’t even like tomatoes. The only way it could get better is if she added some garlic…er…

Beer Can Chicken

This will be the most fantastically moist chicken you have ever had. It’s amazing what a Coors Light or Miller Lite can do to chicken. Serve this with some roasted asparagus, sweet potato fries or a fresh corn salad for summer. You will need a beer can chicken roaster for this. Most grocery stores even carry them these days.

Hubby’s note: He, he, he. She said “moist”.
